Fix logging for users that don't rename parent folder to OpenBBTerminal (#1613)

* Fix terminal for issues when the repository keeps GamestonkTerminal name

* the logs will work regardless of parent folder they are in

* Logging : move log folder

* Fixing bug + Refactoring + Allow calling Terminal from outside the repo

* Black

* Remove comment
