deploy/mainnet/chatmock: bump pin v1.35 → v1.36 (v1.35 doesn't exist)

storagetime/chatmock on Docker Hub publishes only {latest, 1.36, v1.36}
(all the same digest sha256:757c65c8b28941...). The :v1.35 pin from
the initial commit resolves to "not found". The compose's own comment
forbids :latest, so bump to :v1.36.
