david 4ba074020c fix(gateway): set mainnet VECTOR_ZERO_TIME_MS + ref-script UTxOs in compose

Without VECTOR_ZERO_TIME_MS the live tx builder defaults to the testnet genesis,
placing PostEscrow validity bounds ~51 days in the future (Ogmios 3118). Escrow
spends (Accept/Reclaim) also need ESCROW_REF_UTXO. Mirror buyer/supplier mainnet env.
